Offshore Fishing Yields a Delicious Dinner!
How does this sound... sautéed mahi topped with avocado-pepper butter accompanied with Parmesan risotto? Sounds like the type of mouthwatering meal you might have at one of our outstanding local restaurants, right? Well it just so happens that it was my dinner last night (at home!), prepared by my husband and caught off-shore in the Gulf Stream by our friend Colin. Mahi that was swimming that day! Delicious! And to top it all off, the pepper in the savory avocado-pepper butter was grown right here in Kitty Hawk. Yes, a locally grown, caught and prepared meal! There's nothing better.
And speaking of off-shore fishing... the serious fishermen (and those who like to be fishermen for the day) should check out the local charter boats. You can fish in-shore (in the Sound), or off-shore in the Gulf Stream. It depends on the price you want to pay, the type of fish you want to catch and how long you want to be on the boat. Colin took the charter boat "Tuna Fever" with Captain Billy Maxwell out of Oregon Inlet and had a great time. It was an all-day affair, but they caught more than enough mahi to make the day wothwhile. Plus, there's really nothing like being out in the middle of the ocean and seeing the crystal clear Gulf Stream water.

It was a chili pepper. He didn't use much of it, just a few small slivers to give the avocado butter a little kick. By the way, avocado butter is just avocado, lime juice, salt and pepper and a little bit of chili pepper (optional) put in the food processor until it's creamy. It makes a great spread for just about everything from crabcakes to sandwiches.
